La recirculacion de vinaza a la etapa de fermentacion, en la produccion de alcohol, es una tecnica de reduccion en la fuente muy aplicada en esta industria. Presenta el inconveniente de verse limitada porque se pueden alimentar al proceso subproductos de la fermentacion que permanecen en la vinaza despues de la destilacion, que son inhibitorios para la levadura. En este trabajo se definio al acido acetico, como el principal inhibidor de la levadura y se evaluo el efecto de diferentes concentraciones de este sobre la fermentacion, se observo que cualquier nivel del acido afecta la biomasa y a partir de 2.5 g/L empieza a disminuir la produccion de alcohol. Se aplico la extraccion liquido-liquido, sobre la vinaza, como tecnica de separacion de dicho acido, con lo cual se mejoraron las posibilidades de recirculacion, ya que sin la separacion y al cabo de cinco recirculaciones, la biomasa disminuyo hasta en un 70% y la productividad de alcohol hasta en un 30%, mientras que cuando se empleo la extraccion, la biomasa se vio afectada en un 42 % y la productividad de alcohol no disminuyo. En cinco recirculaciones se dio una disminucion del 56% en agua consumida y 44% en vinaza generada.
